Dijon Kale, Apple and Walnut Salad (the perfect salad for your holiday table!)

I made this for dinner last night and it was so good I wanted to re-eat it! (plus, bonus points for how pretty it is). It might even give my garlic kale salad a run for its money (if you know, you know). If you’re still looking for a salad to serve for your holiday meal, stop scrolling and save this recipe!


Dijon Kale, Apple and Walnut Salad

1 bunch kale, chopped
1 apple, sliced
1 big handful walnuts, chopped
Seeds from 1 pomegranate
1/3 cup olive oil
1/4 cup apple cider vinegar
1 tsp honey (more if you want a slightly sweeter dressing)
1 garlic clove
1 1/2 TBS dijon mustard
1/4 tsp salt
cracked pepper
optional: shaved parmesan

Preparation:

Combine oil, vinegar, honey, garlic, and salt in a blender and blend on high until dressing is creamy. Dress the chopped kale in a large bowl and add apple slices, walnuts, pomegranate seeds and optional shaved parm. Top with fresh cracked pepper.
