This dessert is SO FREAKING GOOD you will never even know it’s healthy. So while you’re indulging, your body will actually thank you for the healthy fat and antioxidant mash up that will completely delight your taste buds too. Plus, an avocado a day keeps the doctor away (says me!). Every time I make this, I get asked for the recipe. So, here it is. Enjoy!
This is one my favorite grain salads, and it’s especially perfect when all the summery vegetables are still available at the farmers market! A healthy mix of whole grains, vegetables, fiber and protein that makes a lovely lunch or a delicious dinner addition. It’s simple to make and keeps well so you can eat it for several days. If it’s chilly outside (and, yes, it still feels like winter in SF), chances are the soup is on in my house! So, you guys are going to see a LOT of soup recipes in here. Sorrynotsorry? I like to make one hearty soup each week, usually on Sunday, so that I have it on hand to cover a few nights of dinner. Cook it once and eat it twice, or even better, five or six times! Because that means less time cooking and more time doing whatever else you love. (I also happen to love eating leftovers!)
Soup. Yep, it’s basically my favorite food, as those of you who’ve ever sat at my dinner table already know! I’ve been finding myself wanting to seriously get back to the nutrition basics lately, and soup is one of those basics for me. Super filling but also easy to digest, and so many ways to create the tip up your bowl and drink the last drop deliciousness. Since so many peeps have asked me for my recipes during my Healthy Bites years and beyond, I’m going to start sharing more of them here, starting with this one. Kale, doctored up my favorite way! Whether I’ve hosted friends for a dinner party or delivered food to hundreds of meal delivery clients, this super simple, super health recipe has easily been the most sought after over the years. Unlike other salad recipes, you can make and dress this in advance and it actually gets better (and doesn’t get soggy!) the longer you let it soak up all the lemony garlicky goodness. Just don’t plan on kissing anyone after you eat it. But the garlic breath is worth it, I promise!
