This dessert is SO FREAKING GOOD you will never even know it’s healthy. So while you’re indulging, your body will actually thank you for the healthy fat and antioxidant mash up that will completely delight your taste buds too. This is one my favorite grain salads, and it’s especially perfect when all the summery vegetables are still available at the farmers market! A healthy mix of whole grains, vegetables, fiber and protein that makes a lovely lunch or a delicious dinner addition. It’s simple to make and keeps well so you can eat it for several days.
