Garlic Kale Salad Recipe
Kale, doctored up my favorite way! Whether I’ve hosted a dinner party for friends or delivered meals to hundreds of clients, this recipe has easily been my most sought after over the years. Unlike other salad recipes, kale is hearty enough to dress in advance and it actually gets better the longer you let it sit in the lemony garlicky goodness (and never gets soggy!). Just don’t plan on kissing anyone after you eat it. But the garlic breath is worth it, I promise.
* 1 bunch kale, leaves stripped from stems, chopped
* 1/4 cup olive oil
* Juice of 2 lemons
* 3 cloves of garlic, pressed or chopped
* salt & pepper to taste
Mix oil, lemon, garlic, salt and pepper together and massage into kale. Add anything other veggies or nuts you like! My personal fave additions are shredded carrots, cherry tomatoes, avocado and chopped cashews or pumpkin seeds. Get creative and enjoy!
