This is one my favorite grain salads, and it’s especially perfect when all the summery vegetables are still available at the farmers market! A healthy mix of whole grains, vegetables, fiber and protein that makes a lovely lunch or a delicious dinner addition. It’s simple to make and keeps well so you can eat it for several days. Whether I’ve hosted friends for a dinner party or delivered food to hundreds of meal delivery clients, this super simple, super health recipe has easily been the most sought after over the years. Unlike other salad recipes, you can make and dress this in advance and it actually gets better (and doesn’t get soggy!) the longer you let it soak up all the lemony garlicky goodness. Just don’t plan on kissing anyone after you eat it. But the garlic breath is worth it, I promise!
