Morning Chia Pudding

This is one of my recipes on the regular morning rotation. With just a few healthy ingredients, it's one of my favorite breakfast (and snack) staples full of fiber, healthy fats, and antioxidants. Sometimes it's almost too pretty to eat. And a bonus: it basically makes itself while you hop in the shower!

Morning Chia Pudding

  • 1/4 cup chia seeds

  • 1 cup dairy free milk

  • 1 tsp vanilla

  • 10 drops liquid stevia (I like Sweetleaf Sweetdrops Stevia Clear brand)

  • 1 TBS hemp hearts

  • handful of chopped walnuts

  • Any berries or fruits you like (blackberries, raspberries and strawberries are my fave)

Preparation:

Mix chia seeds, milk, vanilla and stevia and stir occasionally until mixed (you may need to stir a few times over a couple of minutes so the seeds don’t clump together). Let it sit for 10-15 minutes (while you hop in the shower!) then add hemp hearts, walnuts, fruit and whatever extra toppings you like.
